Sugar Snap Chicken Salad

Ingredients
200 g cooked chicken fillet
50 g bell pepper
4 cut up spring onions
1 clove crushed garlic
30 g sesame seeds
50g sugar snap peas (mange tout) peas
30g onion
10 Italian tomatoes
2 tablespoon mayonnaise
1 tablespoon olive oil
¼ teaspoon chili flakes
1 table spoon sugar sweetener optional
Salt and pepper
Method
Step 01
Toast sesame seeds in a non stick pan
Step 02
Grill or roast chicken breasts for 15 minutes until tender and cooked
Step 03
Slice through the peas and the tomatoes
Step 04
Slice the bell pepper
Step 05
Slice the chicken
Step 06
Cut up the spring onions
Step 07
Fold in the chicken – coat well Fold in bell pepper – snap peas – sliced onions – cut tomato
Step 08
Blend mayonnaise, olive oil crushed garlic, chili, and sugar and fold on
Step 09
Lastly top with spring onion and the sesame seeds
