Fennel Butternut Salad

Ingredients
200g Butternut
1 small onion
50g Fennel Seeds
100g salad leaves
30g Ricotta Cheese
Method
Step 01
Cut the butternut into cubs and toss in olive oil salt and pepper
Step 02
Roast on high for 15 minutes – the cool for 10 minutes
Step 03
Toast the fennel seeds in a pan for 5-10 minutes
Step 04
Slice onion
Step 05
Lay out the salad leaves – Toss in the onion slices and half the fennel seeds
Step 06
Lay on top the cooled butternut
Step 07
Sprinkle the last bit of seeds over the top
(Optional put some fennel flowers on the top)
Step 08
Blend together – Juice of 1 lemon -30ml honey – 2.5ml whole grain mustard – 15ml Olive Oil
Blend (Whisk) together & dribble over the Salad add Salt & Pepper Pin It
